A handgun, like the CZ-75 SA Custom that I recently bought, spends hours being worked on by higher paid gunsmiths.
Take an individual part; the gunsmith stones, polishes, and prepares the part for inserting it into the gun. Good, we want that. The gunsmith then inserts the part into the gun. Bad, we paid him big bucks to insert that part.
Someone at S&W thought about this too, and they came out with their "Pro Series". The high paid guy still prepares the parts, but then someone else, who is paid less, actually does the assembly. After final assembly, the gun goes back to the high-paid guy for final inspection.
There are some places where this scenario won't work. Sometimes you put in a part, test, remove, stone, insert, test...
I remember when I first bought the 460XVR, I was amazed at how good the trigger was. I didn't expect a trigger that good that didn't come out of the Performance Center.
Would you notice the difference between a Pro Series and something coming out of the Performance Center. Probably, but I expect you would have to look quite closely.

I would love to see them expand this pro series. I think it's a fabulous idea.
